I know I'm boring getting so excited over this Japanese dish I just made, but I really wanted to blog about this, so you could try it too. You may know Japanese savoury pancake called Okonomi-Yaki. But this one is called Negi-Yaki. Instead of shredded cabbage, we use sliced spring onion, it's much simpler, easier and so cheap to make! like 20p per pancake?
I was so surprised how tasty it was. I nearly cried for it and regretted that I never made this in London before. I think the main reason why I was so happy eating this was because I re-discovered how tasty this simple dish was realising you can actually make this Japanese food with all the ingredients you can buy from your local supermarket "Cheap". You know often cooking Japanese meal, you have to go to Asian super market to buy all the bits you need and can get quite expensive. But this tastes SO JAPANESE, but also very easy & cheap to make!!! That's why I wanted to blog about it and you to try it. This is so revolutionary!!!
Basically all you need is:
・Plain or Self-raising flour (whichever) - 2 table spoonful
・Cornflour (cornstarch) - 1 table spoonful (*very important to use corn flour as well as regular flour to make the pancake moist and sticky)
・Water - 6 table spoon
・2-3 spring onion sliced
・powdered Japanese fish or seaweed stock - 1/3 tea spoon (this might be a bit tricky to find, maybe just use salt instead?)
・Vegetable Oil
・Soy Sauce (preferably light soy sauce, but DON'T USE Amoy Dark Soy, ughhh! that one don't taste anything like Japanese soy sauce, it will ruin this dish)
1- In a bowl whisk together all the flour, powdered fish stock and water untll smooth, then add spring onion and mix.
2 - Oil a frying pan that has been heated, add the mixture.
3 - Using a spatula flatten and form a pancake.
4 - Flip pancake when one side is cooked.
5 - When it's cooked removed to a plate and drizzle soy sauce (not too much) & Mayonnaise if you wish.
6 - Eat quickly before someone near you take your portion!!! or maybe share it, sharing is good!!!
